A Reuben sandwich in soup form? Yes, and it’s every bit the cozy, creamy, tangy dream you never knew you needed. 1️⃣ Start by sautéing onion and celery in butter until soft, then stir in garlic and flour for a quick roux. 2️⃣ Slowly whisk in chicken broth, then add chopped corned beef, drained sauerkraut, caraway seeds, bay leaves, and a swirl of Thousand Island dressing. Simmer gently for 20 minutes. 3️⃣ Fish out the bay leaves, stir in cream and shredded Swiss cheese until gorgeous and melty.
